Famous Vegetarians

This is a list of notable people who are believed to have adhered to a vegetarian diet at some point during their life, listed by nationality. In the cases where a person's vegetarian status is disputed or they no longer adhere to a vegetarian diet, this is noted next to their entry as disputed or former. Even though the vegetarian diet encompasses veganism.

I know what it feels like to be hurt,and I don't want to cause that pain to any other person or creature. But somehow, in society, we numb ourselves in order to make money or to feel better about ourselves, such as with cosmetics or food. We say to ourselves, I'm going to use this animal. I'm going to say it doesn't have much worth so that I can allow myself to do these cruel things. And that just isn't fair.

Veganism in Peru


Peruvian cuisine is one of the world's most intricate and multicultural. Spanning coastal deserts, lush rainforests, and high altitude mountain chains, Peru's food culture is shaped as much by its landscape as it is by the huge variety of cultures and nationalities that have called Peru home over the last millenia. Indigenous Incan recipes blend seamlessly with the flavors of the colonial powers - Italy, Portugal, and most importantly, Spain. Add to this the overwhelming Asian influence brought by immigrants from China, Japan, and Southeast Asia, and you have one of the most dynamic food scenes anywhere in the world.

Vegetarianism is not huge in Peru - the coastal areas are inundated with every type of seafood imaginable, while the Andean plateau subsists mostly on a diet of meat (cuy, or guinea pig, and alpaca are among the favorites) and potatoes. Potatoes play a huge part in Peruvian recipes, finding their way onto almost every plate. Peru is the ancestral home of the potato and produces over 1,000 different varieties of the starchy tuber. Similar vegetables, such as yucca and sweet potato, also are quite common in Peruvian cuisine, along with a wide variety of corn, root vegetables, and grains, such as quinoa.

While most Peruvian recipes are not vegetarian by nature, we have attempted to make vegetarian Peru's most popular meat-based recipes, while providing a thorough exposition of the best veggie dishes Peru has to offer. The flavors used in Peruvian food are still ever present, combining traditional Latin American flavors such as lime, cilantro, garlic, and cumin with the flavors of Italy and Asia. A perfect example is one of Peru's favorite meals, Lomo Saltado, which is flavored with soy sauce, lime, pisco (a local grape liquor), balsamic vinegar, and Peru's most ubiquitous ingredient,aji amarillo, a chili paste made from an indigenous variety of spicy yellow pepper

Papa a la Huancaina


Papa a la Huancaina

Ingredients:

8 Potato’s (Boiled)

0.60 lb Queso Fresco (white cheese)

5 to 7 Soda Crackers

1 can evaporate milk

3 Aji Amarillo (yellow pepper or paste)

2 Teaspoon of oil (olive oil)

1 clove garlic

1 piece of Onion

½ lime or less

Sal and pepper tt

Black olive

Lettuce leaves about 12

Directions:

1. - Add the onion, garlic, Aji Amarillo (Yellow pepper), black pepper and stir-fry for 2 to 4 minutes.

2. - Place all the first preparation the cheese, evaporated milk, in a blender or food processor and puree until smooth. With the motor running, add the crackers one at a time to thicken the sauce. With the motor still running, drizzle in the oil. Add more crackers if the sauce is too thin, add some milk if it is too thick and add the lime juice but not to much just a few drops. Season to taste with salt

3. - Line a serving platter with the lettuce leaves. Place the potatoes on top of the lettuce leaves. Spoon the yellow-cheese sauce over the potatoes. Garnish serving plate with black olive over potatoes and serve cold or at room temperature

Sudado Mixto (Peruvian steamed Veggie fish)

Ingredients:

2 tps olive oil

1 cup onion, sliced

2 garlic cloves, chopped fine

½ teaspoon Bottle Aji Amarillo (Yellow pepper)

½ teaspoon Bottle Aji Panca (Red pepper)

Black pepper and cumin tt

1 cup tomatoes, sliced

½ red pepper thinly sliced

½ teaspoon Ginger, chopped

salt and pepper tt

1 ½ lbs Veggie Fish (Vegan)

½ lb Veggie Shrimp

½ cup beer

10 sprigs fresh Cilantro, chopped

Directions:

1. Heat the oil in a large skillet over low heat.

2. Add the onion, garlic, ginger, Aji Amarillo, Aji Panca, cumin, black pepper and salt and stir-fry for 2 to 4 minutes.

3. Add the veggie fish,veggie shrimp, beer and tomatoes stir and cover for 5-10 min over low heat, (or untill veggie fish is tender).

4. Add the cilantro stir.

5. Serve with lemon slices, over boiled potatoes accompanied by hot white rice

Vegetarian Cuisine "Peruvian Style" Recipes


Mushroom Cebiche (Peruvian Style)

Ingredients:


2 lbs White Mushrooms, chopped

5 garlic cloves, chopped

1 tsp salt tt

1/4 tsp black pepper

1 Bunch of Fresh cilantro, chopped

½ cup Celery, chopped

1 Limo pepper, seeded and chopped

8-12 limes, freshly squeezed and strained to remove pulp and seed

1 ½ red onion, thinly sliced and rinsed (save the heart)

½ Red pepper thinly sliced

1 teaspoon ginger chopped

5 Sweet potatos (boiled)

½ Lb Corn (boiled)


Directions:

Tiger Milk: Blend celery, ginger, garlic, chile , salt, pepper, red onion heart and lime juice.

Ceviche: In a large glass bowl mix mushrooms, red peppers,
onions, cilantro and Tiger milk let it sit for 5-10 minutes.
Serve the ceviche on top of lettuce leaves, with corn and sweet potatoes on the side.
